this is a close-up showing how am achieving the texture of the meat...
and this is showing how am keeping 'on track' with getting the wood grain......
NOTE - this rendering is all from my head, from memory of having seen the items...

So much work...and not an eraser in sight! 
Anyway...as it is a Wonderful Work Of Art...may I place a copy of the finished work in our Hall of Fame, please?

now to 'push the values' on the rest to match - and then think will be finished...
