new way to paste texture onto ground

In the past I have used acrylic medium and modeling paste to paste on such things as cheese cloth, and tissue paper. I find both quick thick to use and they tend to clog the holes in things like chees cloth reducing texture.

On my last painting I decided to try gesso. My gesso is a local brand and it is quite thin compared to most brands of gesso. it is more like house paint in consistency. It seems to work quite well as a paste to adhere the material, it cogs the holes less and is much less expensive ($20 per gallon).

Has anyone used this? Does anyone know of a problem using gesso? Is it stable long term?

It all gets covered in layers of acrylic so I figured it should work well.

No, there shouldn't be any problem with doing this. Gesso isn't really "sticky" like the other products, but if you are adding layers of acrylic over top, that will take care of that problem. I've used gesso before to anchor other materials just long enough to add the acrylics and haven't had any problems.
