5 dozen large ("good stuffing") mushrooms
1 bunch green onions
1 pound sausage
1 8-ounce package cream cheese
1. Pluck stems from the mushrooms. Cut up stem pieces. Slice desired amount of green onions from the dark green ends (this adds a nice green color).
2. Fry sausage in a skillet. Add cut-up stem pieces when sausage is halfway cooked. Fry together until sausage is fully cooked. Save any leftover stems for an omelette or to serve over spaghetti.
3. Drain off grease and let the sausage mixture cool. In a bowl, combine the sausage mixture with the cream cheese. Add green onions and stir well.
4. Stuff the mushroom tops with the well-blended mixture. Bake on a cookie sheet at 325 degrees F until light brown, about 20 to 30 minutes. Serve hot or cold.
