Uneven gloss is just a sign of differences in the amount of oil left on the surface of a dried paint film. Some paint areas may remain more oily and thus more glossy and those are prone to result in beading. Try to paint with watercolor on a piece of glass and you should then see exactly what beading is. Beading happens while you are painting and is like Ron described, it is very obvious and annoying when it happens to you, you can't lay the paint down where you want it to stay.
