I've never heard of using 2 mirrors either. Everything I can find on the net talks about using 1 mirror - not a single mention of 2. Besides I haven't a clue as to how you would use 2 mirrors anyway. If they reflected on each other you would have infinite images which would probably not be what the artist wanted - at least for a typical self portrait. Could the 2 have been a typo when they really meant 1?

In looking this up I discovered this article about Rembrandt using mirrors and lenses for his self portraits and tracing the image. It also speaks of only 1 mirror with a diagram.

I've never heard of using 2 mirrors for a self portrait either. The only thing I can think of is positioning the mirrors so you could see both sides of your face in profile and drawing two profiles. Could that have been what was meant?

On another subject we've lost our beautiful sunshine and are back to our cloudy norm. It's still warm though so I can't complain too much

Being self employed and having multiple heart problems, I tend to take lots of short naps. Fortunately my employer is very understanding and supports me entirely in my behavior.
