Honestly, I wouldn't use anything that has molded. If you want to include used coffee grounds, either use them right away and embed them COMPLETELY in some sort of acrylic or oil medium, or else make sure they are thoroughly dried out before using them. People do use them, but you have to be aware of the acid content they still contain and take steps to make sure they won't ruin your piece in the future by breaking down any papers you use. That's why I suggested embedding them in something that creates a barrier between them and the rest of your piece.
