Need ideas for disabled individuals

My wife and I volunteer with arts and crafts for the company that my wife works for. We enjoy helping the art teacher and her classes with her projects and was wondering where we can get ideas to help her. They use mainly acrylic paints. They do have various levels of ability to use brushes and stamps. They are all ages with various levels of mobility, the classes are around 45 - 60 minutes long. Any help with small art/crafts projects would be helpful. They have made Xmas bulbs, cards, 3-D projects and some using different stamps, silly brushes to create different textures for backgrounds.
