Easel, while standing. 60 to 80 degree angle...never less. Even when using very wet on wet...I incorporate the angle's effect on the water into my work and have methods for stopping, starting and funneling rogue water when needed. But in my work...the unknown "happenings" is a big part of what I like.

I use a portable 18x24 wooden board set at about 35 degrees, with legs that I use on whatever surface I'm at. The folding legs were salvaged from another well used portable board that I bought from a second hand store for a dollar. I put a lip on the bottom edge of the wood (to hold the watercolor boards from slipping off), rounded the corners, waterproofed it and it was ready to work on. I use it for most of my projects.

Large table indoors with board raised at the back, outdoors I use a modified camera tripod,

I work on easel, found over the years that is the best solution for me. Sometimes not as comfortable (drips) but I need a distance from my painting, I need to see the whole thing. It also allow me to make some beautiful granular washes wet-in-wet.

I have used a drafting table for years and years
I just was given a proffesional one that changes height and angle using a lever
I have it at about 30 degrees and sit on a tall drafting stool and can stand with ease
Sometimes a simple H easel vertical

Outside I use an easel standing or sitting at the vertical
And sometimes on my lap

I have very low vision so I tape 300lb Arches to 1/2" foam board, This allows me to hold my paint surface close enough to see what I'm painting.

Lately I've been stapling my paper around a cheap canvas - that way I can just drag it around with me to work on wherever...sometimes setting it flat on a table, usually just balancing it on my knees or against a chair...whatever works for wherever I am. Need to be wherever I can keep an eye on that youngest monster child o'mine, so if I wasn't flexible about it, I'd never get anything done.

I voted "other" since I use all three methods, depending upon where I am. We travel (a lot!), and do plein air (board...of sorts), easel at one house, drawing table at the other house.

Inside, on a table, propped up with a pencil/brush/knife/etc when necessary.

Outside, on my lap!

I work at a table generally, but I'm going to be working standing up as much as I can in the future. I've heard it's better for the health. I'll probably get or build a standing drafting table for this purpose.

I have a standing desk that I use for painting. Usually my paper is on a sheet of plexiglass that I can prop for tilt.
