I like Sheperd's pie. . . they make it so good at the natural deli near my house. Been ages since I've had cobbler! Your journal makes me hungry.

Re: IFJM: Mandy's Cooking Adventures

Thanks Joan, EP and Rainy. Glad you are enjoying it even if it does make you hungry

I have been keeping up with this, well mostly, am a day behind right now. I have just been busy and haven't bothered taking the pics off the camera and adjusting, resizing, etc. I will return with more updates and goodies to drool over.

Re: IFJM: Mandy's Cooking Adventures

It has been a while since I posted so I won't put them all up now just a few at a time.

April 8 Easter Sunday
Decided to have some fun today and dye some easter eggs. I've never done that before but it always looked fun. Hope I don't make too much of a mess.

April 9
Went for a visit to Maureen's house today and she showed me hot to make traditional scottish shortbread. It was so easy and tasted so much nicer than shop biscuits.
This is a keeper.
(I got so carried away with the painting I didn't leave room for the instructions)

April 10
We have been having an abundance of sweet treats so time to get back to some proper meals.
Stuart always loves having chicken parmigiana at the local pub for dinner so I thought I'd surprise him and make it for him myself.

April 11
Summer is over now so need to look for a substitute for salad. We'll still have salad now and then but definitely wanting some hot veggies more.
This looks pretty good, tasty and juicy. Stuart is very keen on his sauces. I think this would go well with lots of different things too. I just won't tell him there is zucchini in it.

Re: IFJM: Mandy's Cooking Adventures

Joan I'll try and remember to give you the recipes in future What a compliment that is... thank you.

Debby I agree homemade shortbread is the best. Pity it has so much butter but I only have it at christmas, if then.

OOOH, dying Easter eggs. I remember doing that when my girls (now married) were young. Such fun. I love Ratatouille - YUM!

Re: IFJM: Mandy's Cooking Adventures

I am still behind with my posting. Here is the next bunch of recipes to tempt you all with

April 12
I have come to realise that I actually enjoy baking. This doesn't really help with the daily meal issue but is still a cheap fun way to have some treats. I am sure they are much healthier being homemade, or is that just me trying to justify it?
Here is something different to do with scone dough. I really like dried fruit, especially sultanas and currants.

April 13
I think I did pretty well yesterday with the scone dough so today I'm going to try pastry.
Another old fashioned favourite, quiche. Good for lunch or dinner and Stuart can take leftovers to work. Sounds perfect.

April 14
I saw these in the deli the other day. They looked like they would be tasty. Had a search and found a recipe - don't you love the internet.
Doesn't look too hard so I'm giving it a try for dinner. Not sure how I'm going to go with quantities. Is one capsicum each too much?

April 15
It's my birthday. I want a birthday cake. I'm going to cheat and do it the easy way. No slaving in the kitchen today!
And I want it to have cream and cherries and frosting...

Re: IFJM: Mandy's Cooking Adventures

Hmm...I posted yesterday but it's not here. No Jacqui, no critique meant, (I don't critique) just an American slang term, I'm down with that as in yes it sounds delicious. I don't personally like stuffed peppers, it always equals serious indigestion for me. But all the rest is yummy, I love shepherds pie, and scones with any kind of dried fruit rocks my world, and I don't think I ever met a birthday cake I didn't find delicious.
