It looks like it would work but it also looks to me like it's essentially an expensive rolling pin with handles that can turn into a stand. You can get a high quality heavy rolling pin (high quality so it won't bow in the center) for a quarter of the price of that. Having not seen it in person though, I don't know if there are qualities about the pin press that might make it worth the price.
mostly that it is machined to be very precisely flat I think.
