I ended up being falling in a rabbit hole of watching printing videos. From a video from Akua, they also say that you need a very flat table. The artist in this one is making some good size prints with it.

It looks like it would work but it also looks to me like it's essentially an expensive rolling pin with handles that can turn into a stand. You can get a high quality heavy rolling pin (high quality so it won't bow in the center) for a quarter of the price of that. Having not seen it in person though, I don't know if there are qualities about the pin press that might make it worth the price.
