Shading is what you need to know. and there's too much to say at once. The first answer is to have the subject lit well enough. One of the best ways may be to learn about lighting for photography. Take a look at Bouguereau's La Priere to see great lighting, although I cannot recommend you try to copy it.
You possibly won't be too worried about conservation yet, so cheap canvas might suffice for the time being. Better quality canvas has a closer weave and is much better as a painting surface. I regard quality, high pigment loaded paints to be essential for classical type painting as there is a general tendency to use thin layers of paint.
