Help! I have several canvasas I need to reuse and gesso doesn't seem to cover. I also have a problem taking out the streaks from the brushes. Any ideas?

Try sanding the canvas first then apply the gesso, apply 2 or 4 thick coats allowing the gesso to dry complete between each coat. To remove the brush strokes, sand the gesso after its dry with very fine sand paper.
Hope this helps.

Peace.

Gesso, as you have found is actually fairly transparent. But its used as a sealer, so although you can still see a ghost image, the canvas is sealed and a new layer of paint can be applied. I've done this several times to old paintings...after applying the gesso a couple of coats...I use a cool or warm first layer of paint for an undercoating...then paint on!
