As I am still learning acrylics I was wondering what colours should be mixed and how or if there any books with colours to make in them, how many colours should I have for a palette, which I wll be doing for landscapes, people, water and animals?

It shows all the colors you can mix from just 6 tubes of colors:
2 yellows, 2 blues and 2 "reds" ("PLUS" whites) .. Probably not every paint manufacturer uses exactly the same color names --but I think you can tell from the color "swatches" what equivalent colors of any brand would work comparably well.
This practical guide seems to reflect some of the ideas "purported" in book,"Yellow and Blue Don't Make Green" (or is the title "Bue and Yellow Don't Make Green"). Also, as you will see, there is an obvious "use" of the
"new" or "Real Color Wheel" (D.Jusko's) in that the "magenta," "cyan" and "yellow" --primaries are evident...Some of these colors weren't available to the "old masters" and are only available now due to chemical and physics engneering, I believe.
Hope this helps! With just a handful of colors you have a vast range of hues and tints at hand- not only for the "natural" subject matter you mentioned -but whatever style -or subject matter.
