I was wondering what color space everyone works in in their chosen app?

CMYK? sRGB? Adobe RGB? Or, something else?

RGB should be fine for typical printing to an inkjet printer or a laser printer. When you are setting up a document which is going to an offset press, you would save everything as CMYK, although that too is changing, and with the software today RGB can be converted.
sRGB is usually recommended for online use, as it will look best on most monitors and electronic devices.

One after thought, CMYK is limited. You will get "out of gamma" warnings, and some colors especially blues will not look vibrant when they are converted to CMYK, so you probably shouldn't use CMYK unless your print situation particularly calls for it.
